Should I accept the arrangement to fly out to my interview and leave on the same day? The company that I have an onsite interview for wants me to fly out on the same day as my interview and leave on the same day. They also proposed another option of flying in the day before.

When it comes to travelling for interviews, I always err on the side of preparedness.  I recommend the option of flying in the day before.  This will allow you to tour the area, if you choose, as well as help you feel less stressed on the day of the interview.  It's not uncommon for flights to be delayed and in order for you to be on your "A" game, you'll probably prefer to not have that hassle all on the same day as the interview.

If a company is willing to fly you in the day prior to interviews, I would take advantage of it. I assume they would very likely offer to cover the cost of a hotel and meals as well. By arriving early, it will allow you to settle in prior to your interviews and explore the area to get an idea of the city that you could be working in. As Jenna mentioned, flight delays are often difficult to avoid so by flying in the evening prior, it gives you extra time in case your flight is delayed or cancelled. A full day of travel plus interviews can also be incredibly draining! Take advantage of the extra time to ensure you are at your best.
